Irish Brack Cake

Preparation Time: 30 minutes.  Cooking Time: 50 to 70 minutes. Makes 10 - 12 slices


500g (1lb) Mixed Dried Fruit

300ml (1/2 pint) Cold Tea

275g (9oz) Self Raising Flour

150g (5oz) Soft Brown Sugar

1 Egg, beaten.


Put the fruit, sugar and tea in a bowl and leave for 3 hours or until the tea is absorbed. Beat in the egg and the flour. Pour into a lined and greased 2lb loaf tin.

Bake at Gas mark 4, Electric oven 180°C, for 1½ to 2 hours. Turn onto a wire rack to cool. 

Best served sliced with butter.
